24 Oysters (these are Chesapeake Bay)
1 cup parmesan or romano cheese, grated
1 cup mozzarella cheese, shredded
2 tablespoons garlic powder
2 teaspoons cajun seasoning
2 lemons zested and juices
1/4 cup fresh parsley, chopped
4 tablespoons salted butter
3 garlic cloves, sliced
Preheat Grill to 450F.
Combine cheeses, garlic powder, Cajun seasoning, zest, lemon juice and chopped parsley. Set aside.
Shuck the oysters by holding the oyster firmly by the shell and press the oyster knife between the "hinge" at the end of the oyster. Once you get the knife slightly inside and twist knife to open up oyster, making sure not to spill the liquid. Run your knife under the oyster to separate from the shell.
Top oysters with cheese mixture and press gently on top of oyster. Place carefully on the pre-heated grill and cook until bubbly.
