2 cups all purpose flour
1 cup graham cracker crumbs
1 teaspoon baking soda
1 teaspoon kosher salt for dough and 1/4 teaspoon flaky sea salt for sprinkling
1 cup salted butter, softened
¾ cup sugar
¾ cup brown sugar
1 1/2 teaspoon vanilla extract
2 cups miniature chocolate chips
14 Oreo cookies
Preheat oven to 350F.
In a medium bowl combine the flour, graham cracker crumbs, baking soda, salt.
In a stand mixer with a paddle attachment, beat together the butter, sugar, brown sugar and vanilla until creamy. Add the eggs one at a time, beating well after each addition. Slowly beat in the flour mixture until smooth and fold in the chocolate chips.
Weigh 3 ounces of cookie dough and form into balls. This recipe makes 14 cookies. Put parchment paper on a cookie sheet and evenly place greased English muffin rings on top. Separate each 3 ounce ball of dough in half and place a Oreo cookie in between, wrapping the cookie dough all around the Oreo. Place each formed dough in the center of the English muffin ring. Bake for 16 minutes until golden. Sprinkle flaky sea salt on top and allow to cool inside ring for 10 minutes. Pull off rings and move cookie to cooling rack. Enjoy!!!
