Have you ever saved and used your leftover pickle juice to marinate chicken? It is so so good. We love pickles and go through them quickly and I am all for using as much as possible when I cook. Pour the reserved pickle juice over your chicken and it adds flavor and tenderizes the chicken.
24 chicken wings
3 habanero chilies, chopped
2 tablespoons vegetable oil (oil the grate)
1 cup mayonnaise
1/2 cup sour cream
6 cornichons and 3 teaspoons of juice from jar
3 green onions
3 cloves of garlic
handful of fresh dill
1 1/2 teaspoons of kosher salt
1/2 teaspoon fresh black pepper
1 teaspoon mustard
1/2 teaspoon of cayenne
Preheat grill to 450F. Create dual zone grilling by lighting and placing charcoal on one side of the grill.
Bring several inches of water and place chicken wings in a steamer basket. You can also put them in the oven close to each other to steam. Steam for 10 minutes. Allow to dry for an hour in refrigerator. Sprinkle rub of choice all over wings. I used Victory Spices Game Day Hero rub. It should be released soon, it is a new company. Oil grill grates and grill wings until the reach 170F, moving them around so they don't get scorched. It is also important to keep them close to continue steaming to maintain moisture in wings. Blend dressing ingredients until smooth. Enjoy!
