I made this a couple times in one week I loved it so much! The creamy, cheesy spinach I could eat with a spoon.
1 large boneless, skinless turkey breast
1 tablespoon poultry seasoning
1 package of bacon
2 packages of frozen spinach
4 ounces cream cheese
1 cup Monterey and Colby Jack shredded cheese
1/4 cup parmesan cheese, grated
1/2 teaspoon cayenne pepper
2 teaspoons garlic powder
salt and pepper
2 tablespoons honey
1 tablespoon balsamic vinegar
1/2 tablespoon olive oil
Preheat smoker to 225F.
Butterfly turkey breast and pound to equal thinness. Season with favorite poultry seasoning. Microwave cream cheese to soften and make easier to blend for 30 seconds. Microwave frozen spinach and drain completely. Mix in remaining ingredients and spread evenly over butterflied turkey breast. Roll up turkey breast tightly containing spinach mixture. Wrap in plastic wrap and put in the freezer while you weave the bacon. Basket weave the bacon on top of a sheet of plastic wrap. If you want to see how I did it check out my reel on @mlkfredcooks. Take out the stuffed turkey breast, unwrap and place on top of the edge of the bacon weave. Roll tightly and place on top of an oven rack over a baking sheet. Combine basting ingredients and microwave for 30 seconds and whisk, brush over bacon wrapped turkey breast. Smoke until internal temperature reaches 165F. Depending on the size of the turkey, it will take approximately 3 hours at 225F. If your bacon does not look as crispy as you like it, you can put it in your oven on broil for a few minutes. Allow to rest 15 minutes before slicing. Tag me and share your creation!
