Fire up your grill and smoke some ice cream! It adds a delicious extra layer of flavor that goes perfectly with the toasted candied pecans and up yet another level with the bourbon caramel sauce. I am also thinking cherry compote or grilled strawberries on top. The topping ideas keep on coming!
1 tub of Vanilla Ice Cream
1 cup chopped pecans, toasted, candied
1 1/2 tablespoons sugar
1 1/2 tablespoons brown sugar
1 teaspoon cinnamon
pinch of cayenne
1/2 teaspoon sea salt
1/2 egg white
Bourbon Caramel Sauce:
1 cup sugar
1/4 cup water
1/2 cup heavy whipping cream, room temperature
1/4 cup salted butter, room temperature
1 teaspoon vanilla
3 tablespoons bourbon (I like Maker's Mark)
Prepare your grill to 400F Indirect heat. Fill a smoke tube 1/4 full of cherry pellets. place on direct side of the grill.
Scoop the amount of ice cream you want to eat into a bowl and place that bowl in a heatproof bowl of ice. Put in the freezer until you are ready to grill.
Prepare bourbon caramel sauce. Combine sugar and water into a saucepan over medium high heat. Stir once and then allow sugar to melt without stirring again. When sugar mixture reaches an amber color remove pan from heat. Slowly stir in heavy cream then add butter, vanilla and bourbon. Whisk until smooth.
Make your candied toasted pecans. Preheat oven to 300F. Combine cinnamon, both sugars, salt and cayenne. Toss pecans in egg whites and toss in dry mixture. Spread onto a parchment lined baking sheet and toast for 20 minutes. Stir and put back into the oven for another 20 minutes. Set aside.
Smoke your ice cream! Place ice cream that is in the bowl in the heatproof bowl of ice on the indirect side of the grill next to your smoking smoke tube. Shut grill and smoke for five minutes and then open and turn ice cream. Smoke another five minutes and then remove from grill. Place back into the freezer until it is the desired consistency. Top with toasted candied pecans and bourbon caramel sauce. Enjoy!
