These were so fun to make! I started with homemade waffles made on my waffle iron and then using clean kitchen scissors shaped the waffles into footballs. Perfect for a gameday appetizer!
3 garlic cloves, minced
2 teaspoons kosher salt
1 tablespoon hot honey
1/2 teaspoon cayenne
7 boneless, skinless chicken thighs
1/2 cup Frank's hot sauce
1/2 cup salted butter
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/2 teaspoon kosher salt, or to taste
In a large bowl or resealable plastic bag, combine the hot sauce, oil, lemon juice, garlic, salt, hot honey and cayenne. Add the chicken and rub marinade into chicken ensuring that each thigh is covered thoroughly. Refrigerate for at least 3 hours or, even better, overnight.
Preheat grill to 450F.
Prepare waffles. Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Place on cooling rack while you make remaining waffles. Using clean kitchen shears cut waffles into football shapes.
Prepare Buffalo sauce by combining the hot sauce, butter, cayenne pepper, garlic powder, and salt in a pot and place over medium heat. Bring to a simmer while stirring with a whisk. As soon as the liquid begins to bubble on the sides of the pot, remove from heat, stir with the whisk, and set aside for use.
Grill Chicken thighs. Prepare grill for dual zone grilling and oil the grates. Remove the chicken from the marinade, allowing any excess to drip back in the bowl and discard the marinade. Place the chicken on the hot side of the grill and cook until brown and charred in spots, about 5 to 7 minutes, flip and grill until cooked through, about 5 minutes longer (chicken should read around 165ºF in the thickest part). If chicken is getting brown too quickly, move it over to the cooler side of the grill. Transfer the chicken to a platter and spoon or brush over the Buffalo Sauce. Serve on waffles with blue cheese dressing. I served it over arugula to put on the sliders as well. Enjoy!
